GREEN AND WHITE TEA
Green tea is a type of tea made solely with the leaves of Camellia sinensis, being processed with minimal oxidation. Similar to green, oolong and black tea, white tea comes from the Camellia sinensis plant. The only difference is that it is the uncured and unoxidized tea leaf, while the Oolong and black teas are oxidized before curing.
White tea contains buds and young tea leaves, which have lower levels of caffeine than older leaves, explaining that the caffeine content of white teas is slightly lower than that of green teas.
White tea is scarcer than the other traditional teas, and quite a bit more expensive. Most green teas have a distinctive 'grassy' taste to them, but white tea does not. The flavor is described as light, and sweet. The white tea must be steeped in water that is below the boiling point.
